Cinnamon vanilla toasted oats

This is one of the simplest and most satisfying things you will make and eat. During the toasting process the smell goes from biscuity to something like a freshly baked cake. And there’s no added sugar.

INGREDIENTS (Serves one)

1/4 mug porridge or rolled oats

1/4 teaspoon vanilla paste

1/2 teaspoon cinnamon

1 teaspoon coconut oil

METHOD

Measure the oats out into the mug, add the cinnamon and mix well, add the vanilla paste, mix well to ensure it doesn’t stay in one little lump.

Melt the coconut oil in a non-stick pan, over a low heat, add the oats and stir or shake for 5 minutes until they are golden brown. Be mindful not to let them burn, keep them moving.

Sprinkle over anything sweet of your choice, yoghurt, fruit, dessert, ice cream or make a larger amount and eat like granola cereal.
